Fire Dragon Fruit

Have you ever seen one of these?  I had never imagined such a thing.

It’s a fire dragon fruit also known as a pitaya.  It is the fruit of a cacti.  One of my Dad’s coworkers is Chinese and she gave us some.

The best way to eat one is to cut it in half and scoop out the white flesh with a spoon.  When you’re done it looks like this:

It makes its own handy-dandy little bowl.

Wikipedia says it tastes “very bland… like a melon or kiwi, with a mild sweetness.”  That’s about right.  If you eat close to the pink part, it tastes a little like watermelon rind.  My favorite part was the seeds.  They are kind of nutty and are apparently high in lineoleic acid.   Overall, I liked it and would definitely eat it again.
